Way simpler than pie: no crust rolling, no lattice. You just make a simple batter, pour it in the pan, dump the blueberries on top, and the batter rises up around the fruit while it bakes. The edges get golden and crispy and the middle is soft with all the blueberry juice bubbling through.
Ingredients
- Fresh blueberries
- Sugar
- Lemon juice
- Cornstarch
- All-purpose flour
- Butter
- Sugar
- Baking powder
- Milk
- Salt
Recipe
- 1.Preheat the oven to 350ยฐF.
- 2.In a large bowl, stir together blueberries, sugar, and lemon zest until combined. Set aside.
- 3.Place the butter in an 8x8-inch baking dish and put it in the oven until melted, about 10 minutes.
- 4.Meanwhile, whisk together flour, sugar, baking powder, and salt in a medium bowl. Whisk in the milk until just combined.
- 5.Carefully remove the hot dish from the oven and pour the batter in. Do not stir. Top evenly with the blueberry mixture and sprinkle with coarse sugar.
- 6.Bake 40โ45 minutes until the batter is golden brown and a toothpick inserted in the center comes out mostly clean. Cool slightly before serving, and it's great with vanilla ice cream.
