Press them down really hard in the pan or they crumble when you cut them. Refrigerating before slicing helps a lot too. These are way better than store-bought. You can taste that they're actually made with real ingredients. Good for a snack or breakfast.
Ingredients
- 2 cups rolled oats
- ½ cup shredded coconut
- ½ cup honey
- 2 tbsp creamy peanut butter
- 1 tsp vanilla extract
- ⅛ tsp salt
Recipe
- 1.Preheat oven to 325°F. Grease a 9-inch square baking dish.
- 2.Spread 2 cups rolled oats and ½ cup shredded coconut on a baking sheet. Toast in the oven until browned, about 10 minutes. Transfer to a large mixing bowl.
- 3.In a saucepan over medium-low heat, mix ½ cup honey, 2 tbsp peanut butter, 1 tsp vanilla, and ⅛ tsp salt. Cook and stir until smooth.
- 4.Pour the honey mixture over the oats and coconut and stir to coat. Spread evenly into the prepared baking dish.
- 5.Bake about 15 minutes for crunchy bars, or less for chewy. Cool completely before cutting.
