Chef notes

Classic waffles from scratch. The key is not overmixing the batter. Lumps are fine. A hotter waffle iron setting gives you crispier edges which is way better than soft and soggy. Let them sit on a wire rack so they stay crispy instead of steaming on a plate.

Ingredients

  • All-purpose flour
  • Sugar
  • Baking powder
  • Salt
  • Milk
  • Butter
  • Eggs
  • Vanilla extract

Recipe

  1. 1.Preheat the waffle iron. Use a darker or higher heat setting for crispier waffles.
  2. 2.In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla.
  3. 3.Pour the wet ingredients into the dry and stir just until combined. Don't overmix.
  4. 4.Grease the hot waffle iron with butter or cooking spray. Add about โ…“ cup of batter per waffle (adjust based on your waffle maker).
  5. 5.Cook until golden brown. Place on a wire rack to keep them crispy until ready to serve. Serve with maple syrup and butter.
