Chef notes

Made three flavors at once: chocolate peanut butter, matcha, and banana bread. You just mix everything the night before and stick it in the fridge. By morning it's thick and creamy without any cooking at all. The matcha one looks the coolest but the chocolate peanut butter one is really good.

Ingredients

  • Rolled oats
  • Milk (or oat milk)
  • Greek yogurt
  • Chia seeds
  • Maple syrup
  • Cocoa powder
  • Peanut butter
  • Matcha powder
  • Banana
  • Cinnamon

Recipe

  1. 1.BASE (1 serving): Combine Β½ cup rolled oats, 1 tbsp chia seeds, Β½ cup milk, ΒΌ cup Greek yogurt, and 1 tbsp maple syrup. Refrigerate overnight.
  2. 2.BANANA BREAD: Mash a ripe banana into a puree. Mix into the base oats along with Β½ tsp cinnamon and Β½ tsp vanilla extract. Refrigerate overnight. Top with banana slices, a drizzle of maple syrup, and chopped walnuts.
  3. 3.CHOCOLATE PEANUT BUTTER CUP: Make chocolate syrup by mixing 1 tbsp melted coconut oil, 1 tsp cocoa powder, 1 tsp maple syrup, and a pinch of salt. Mix 2 tbsp peanut butter and 1 tbsp cocoa powder into the base oats, then pour the chocolate syrup over the top. Refrigerate overnight. Top with blueberries and/or raspberries.
  4. 4.MATCHA: Combine 2 cups rolled oats, ΒΌ cup chia seeds, 2 cups milk, 1 cup Greek yogurt, ΒΌ cup maple syrup, and 2 tsp matcha powder. Mix well and refrigerate overnight.
